The great outdoors feels very present at this contemporary hotel beside a championship golf course, with seven miles of Atlantic-washed sands on an island of rugged uplands, peat bogs and wetlands, sea stacks, waterfalls and vast skies. But return from a day of wild swimming, hiking, biking, or close encounters with deer, seals and brown hares, and you can take afternoon tea by the fire in warm spaces adorned with modern art. Scandi-chic bedrooms, some with direct outdoor access, and duplex suites are supplied with sustainable Land and Water toiletries. In the restaurant, too, with views across the links, land and water supply menus of island produce in oysters every which way; venison with red-wine-cured blackberries and sweet juniper jus; whole lobster with chips; carrot fondant with carrot tops, roast celeriac, snowball onion, onion jus, herb oil. At breakfast there is kedgeree as well as the full Scottish, vegetarian and vegan. Dogs and kids are very welcome.
