“A gem”: opened in 2001, this renovated 18th-century post house stands amid Minervois vineyards. “Reasonably priced, stylish, very French”, it has “charming hosts”, says a visitor. The restaurant, L”Atelier des Saveurs, offers eg. crispy veal sweetbreads with citrus fruits; summer truffade, new potatoes and burrata. Meals are also served outdoors. “Staff are attentive but not overbearing. A busy road is near, but we were not bothered by traffic noise. In the heat of August we were grateful for the clean, adequate-sized swimming pool and the air conditioning in our bedroom.”
