Jacob sheep and Highland cattle gaze in wonder as small planes touch down on a private landing strip at this fantastic destination on the Black Isle peninsula, where derelict farm buildings, set around a quadrangle, have been transformed for Euan Ramsay and his mum, Rebecca. As well as the Fraser room and two suites with log-burner, there are three self-catering cottages, all presented in modern country-house style, with handmade furniture. There is a Japanese-style whisky bar, a restaurant serving elegant dishes of local produce – maybe Hebridean scallops with apple and fennel followed by 34-day-aged Highland ribeye or miso grilled courgette with tempura flower, pumpkin and pine nut pesto. Picnic hampers, Sunday roasts, wood-fired pizzas and food from the firepit all feature at this extraordinary and special place.
