Whether your taste is for Tudor oak panelling and an antique four-poster, or something more contemporary, you’ll find it at this Elizabethan manor house with a modern spa set within the old walled garden. House rooms are spread across the original manor and a Victorian extension, some with lovely views of the South Downs. There are great views, too, from six spacious, air-conditioned suites above the spa, which open onto a roof terrace. Built for the Burrell family, the old house has many original features – 17th-century panelling, ornate plasterwork, stone fireplaces. You can take tea or a glass of sparkling Sussex wine in the elegant drawing room, and dine from a short, set-price menu, on dishes such as spring vegetable cassoulet, or roast beef fillet with braised oxtail and a garlic cream crumb. For those fancying something more casual, maybe order a burger from the bar menu.
